
Imagine stocking up on your favorite vegetables and berries at the farmers market, then opening the freezer months later and having them available to you again.
Vegetables need to be blanched in boiling water for 2-3 minutes to stop the growth of the plant. After boiling, immediately dunk them in ice water then spread individual pieces on a cookie tray and freeze.
Berries should be washed, dried thoroughly, and frozen on a tray. Transfer the pieces to a freezer bag. Whenever you have a hankering for the taste of summer, pour out a few pieces and cook with them as you would fresh produce.
